The multicultural alleyways of Itaewon are famous for its nightlife, the US Army base, and the Budae Stew.
When food was scarce, and American rations were combined with Korean ingredients.
Ingredients
200g The Han Kitchen Organic Glass Noodles, 1/2 carrot,1 onions, 1/2 bunch of spinach, 60g beef or preferred protein, oil, salt, pepper [Japchae sauce] 1/2 tbsp soy sauce, 1/2 tbsp sugar,1 tbsp sesame oil, 1 tbsp minced garlic, 2 tsp roasted sesame seeds
Step 1 Cook meat first
Slice carrots, onions and the meat. Cook the meat over high heat with the oil in a pan untilit's golden brown and stir-fry vegetables for 3 minutes.
Step 2 Cook noodles
Cook the noodles for 8 minutes in boiling water until completely translucent and soft.
Step 3 Garnish and serve
Mix all the ingredients and the sauce in a big bowl. Adjust the seasoning with salt and pepper as required. Garnish with sesame seeds, and serve at room temperature.

2 bundles The Han Kitchen Organic Soba, 1 medium green onion, 200g radish, 1/2 cup mentsuyu or tsuyu (dipping sauce)
Step 1. Prepare to cook
Thinly slice green onions and grate radish and put them in small dishes. Pour mentsuyu in individual dipping sauce bowls.
Step 2. Boil for 6 minutes
Cook the noodles in boiling water for 6 minutes gently stirring occasionally until tender. Quickly rinse noodles under cold running water until completely cold and drain well.
Step 3. Garnish and serve
Put a small portion of green onions and radish in the dipping sauce and dip the soba noodles to enjoy!

2 bundles The Han Kitchen Organic Ramen, 1 tbsp sesame oil, 200g sliced pork, 3 tsp grated ginger, 4 tsp grated garlic, 4 cup chicken or vegetable broth, 4 cup water, 1/2 cup chopped chives
Step 1. Cook meat first
Slice meat and stir-fry in a pan with 1/2 tbsp sesame oil until just starting to brown, then set aside.
Step 2. Boil Ramen broth
Heat the sesame oil in a large skillet and stir fry the garlic and ginger over medium low heat. Add the broth and the water and bring to a simmer.
Step 3. Add noodles and season
Add the noodles to the hot liquid and simmer for an additional 5 minutes. Add the chives and stir to combine. Season with chili oil, sesame oil and salt to taste and serve.

2 bundles The Han Kitchen Organic Udon, 1/2 sliced green onions, 200g thinly sliced beef,1 tbsp oil, 1 tbsp soy sauce, 2 tsp sugar [Udon broth] 1/3 cup mentsuyu or tsuyu, 450g water,1 tbsp mirin
Step 1. Prepare Udon broth
In a medium saucepan, put mentsuyu or tsuyu, water and mirin and mix well. Bring the mixture to a gentle simmer over medium heat.
Step 2. Cook beef and noodles
Cook beef on a pan over medium heat with soy sauce and sugar until it is well coated with the seasoning. Remove from the heat. And cook the noodles according to the package instructions.
Step 3. Garnish and serve
Divide the well-drained udon noodles into individual bowls and pour the hot broth and place beef and green onions on top.

Step 1. Prepare to cook
Thinly slice green onions and grate ginger and put them in small dishes. Pour mentsuyu in individual dipping sauce bowls.
Step 2. Cook the noodles
Cook the noodles in boiling water for 3-5 minutes gently stirring occasionally until tender. Quickly rinse noodles under cold running water until completely cold and drain well.
Step 3. Garnish and serve
Put a small portion of green onions and ginger in the dipping sauce and dip the somen noodles to enjoy!
